Giuseppe Caprarella, called Pino,was born at Melfi, historical city of the Basilicata region. As a young boy, he worked with his family in the production and sale of fruit and vegetables. At the age of 15 he moved to the Lidi di Comacchio where he gave himself up to the learning of cooking and restaurant management. His first working experience was at the Ristorante Pizzeria Vecchia Bologna at Porto Garibaldi and afterwards at the Ristorante Pizzeria Dancing La Fattoria in Lido degli Scacchi. When he was 17, he joined in management of the Pizzeria at the Lido di Spina Camping and as a restaurant manager he worked at the Caffè Concerto of Grand Carian Lido degli Estensi. In 1980 he came Florence, thinking he would have left restoration. He firstly worked with Tosco Legnami, a wood manufacturing company in Via Sestese, but, only after three months there, he realized that woodworking was not his passion so he started again working with a restaurant, at the very famous Villa Vecchia in Pratolino. During the summer 1981 two friends from Comacchio (Francesca and Romano) called him to join themselves with the opening of a new Restaurant 'La Darsena' at Porto Garibaldi which he was willing to accept. In October 1981 he came back to Villa Vecchia and up to 1984 he worked there as a head waiter. In the spring of that year, the Chef suggested him to move to the kitchen where he worked for 4 years, working with great Masters like Mario, Michele, Cecco and Giancarlo and where he could worm out the secrets of good cooking which he would use later in his own restaurants. In 1988, along with three friends of his, he started his own restaurant 'La Trattoria Bordino' located under the old walls of Costa San Giorgio near the Old Bridge. In 1990, together with his brothers, he started the 'Caffè Latino' at Tavarnuzze. In 1992 the Caprarella Brothers constituted the Europa Service Company for Restauration, which eventually purchased the 'Antico Ristorante La Grotta Guelfa' as its first act. In 1995 they took over the Restaurant I Quattro Amici and in 2000, using some of the rooms of this restaurant they started the famous “Trattoria Pizzeria il Portale". In 2001 a new pizzeria-restaurant was opened : 'Il Pruneto', at Impruneta. In 2007, abandoned premises were turned into a prestigious Trattoria called Il vecchio Mercato, near the central San Lorenzo market. The latest born is the fantastic Osteria dall’Ostein Via Alamanni, just in front of Santa Maria Novella central Railway Station.
